Sweet potato and Chickpea burgers!

These are my new favourite thing to make for dinner! Sooo easy, quick, nutritious and filling!

Sweet potato is one of my favourite things ever, I have it in brownies, with nut butter, as mash, chips, thrown into a curry.. I love it. It is high in vitamins B6, C, D, contains potassium, magnesium and iron, and slowly releases its natural sugars into the bloodstream to keep up energy levels.

I also can’t get enough of chickpea’s at the moment! Chickpea’s for me are a great source of fibre and protein, so combined with sweet potato it is the perfect meal.. with a large helping of veg!

To make:

1 sweet potato

1 cup of chickpeas

1 egg

1 tsp ginger

2 cloves garlic

coconut oil

Boil the sweet potato and chickpea’s until they are easily mashable. ¬†Crack and mix the egg into the mixture, and start to make burger shapes with the mixture. Fry the burgers in coconut oil, ginger and garlic. Serve and enjoy with a large helping of veg or whatever else you fancy! I poured some tamari source on mine to compliment the ginger and garlic.
