Sweet potato and Chickpea burgers!

These are my new favourite thing to make for dinner! Sooo easy, quick, nutritious and filling!

Sweet potato is one of my favourite things ever, I have it in brownies, with nut butter, as mash, chips, thrown into a curry.. I love it. It is high in vitamins B6, C, D, contains potassium, magnesium and iron, and slowly releases its natural sugars into the bloodstream to keep up energy levels.

I also can’t get enough of chickpea’s at the moment! Chickpea’s for me are a great source of fibre and protein, so combined with sweet potato it is the perfect meal.. with a large helping of veg!

To make:

1 sweet potato

1 cup of chickpeas

1 egg

1 tsp ginger

2 cloves garlic

coconut oil

Boil the sweet potato and chickpea’s until they are easily mashable.  Crack and mix the egg into the mixture, and start to make burger shapes with the mixture. Fry the burgers in coconut oil, ginger and garlic. Serve and enjoy with a large helping of veg or whatever else you fancy! I poured some tamari source on mine to compliment the ginger and garlic.

Nut Butter Smoothie

I woke up this morning really craving something creamy and nut buttery! I threw together a quick smoothie to satisfy my cravings and it was literally one of the best (and easiest) smoothies I have ever made!

I would really recommend pairing this smoothie with one of my cashew and banana squares from my last post!

1 frozen banana

1 tbsp of nut butter (I used whole earth mixed which includes cashew, peanuts and hazelnuts)

1 tsp cinnamon

2 dates

2 cups coconut milk

blend it all together for the creamiest most delicious milkshake like smoothie!

Cashew and Banana Oaty Nutty Squares

So I am coming to realise by the time that I want to blog my recipes that I never actually measure anything out, and I throw in whatever I want! If you are like me and can kind of judge constancy then here is a quick recipe for some cashew butter and banana, oat and nutty squares!

These were so yummy and had such a nice texture.. just like eating a piece of banana flapjack. I ran 19 miles in Richmond at the weekend and these were perfect to put a square into my water belt to eat half way around! My dad has always taught me to eat when I run so that when I come to do some really long endurance events my stomach will be used to it. Plus if you eat you won’t hit the wall or bonk like so many people do!

Me and my boyfriend also enjoyed a slice (or two) after our dinner!

2 cups of oats

1 cup of mixed linseed, chia seeds and goji berries (I buy this ready mixed from the brand Linwoods)

2 bananas

1 tbs cashew butter

1/2 cup of pumpkin and sunflower seeds

1 tbs honey

Mix it all up, throw it in a baking tray and put it in the oven for about 25/30 mins!

Runner Problem’s

1. You have now accepted that the few toenails you have left, are probably black anyway. Say goodbye to sandals and say hello to painting onto your skin to pretend that you have nails there. Marshall Ulrich (amazing ultra runner) had all of his surgically removed! Marshall- we get it.

2. When you get to a hill on your steady weekend run with your buddies, you are indeed listening to their breathing and deciding whether, if you wanted to, you could drop them at this point. You also take pleasure in this and forget about how painful this hill is 12 miles into your run.

3. After your long run you literally don’t stop eating from the minute you come home. And you’re super mad if your mum forgot the avocados!

4. when you get asked what you did at the weekend and you respond, “Not much, did a nice 18 mile run and went out for tea, then I biked on sunday”, you are now officially known as a nutcase to all none-runners. This is something you come to accept, and should refrain from saying how little training you’ve done this week..nobody will understand.

5. When you calculate how much you have spent on the necessary different pairs of trail, race, training and gym trainers and realise how many pairs of Louboutin’s you could have had! I die.

6. The most annoying thing in the world is when you’ve forgotten your garmin, its broken or you forgot to charge it. Yes I know how far I ran but I need my Garmin connect calendar to prove it!

7. An ideal weekend would be a trip to the lake district to get in some good hills and food. How old am I again?

8. When you make any plans for the weekend you have to factor in when your long run will take place. You will even go as far as using a precious holiday day from work to fit in a long run because you’re going to Paris for the weekend. You consider taking your trainers to Paris but feel that your boyfriend will not appreciate being left in the hotel room for 3 hours.





Bliss Balls go to Boom Cycle

I had the pleasure of meeting Lily Rice, founder and designer of Lexie Sport one random night at her pop-up in Old Street tube station. I was ridiculously late for a house viewing, but I couldn’t help but go in and take a look.. okay I may have made a purchase too!

I have kept in contact with Lily and she recently asked if I would like to bring my Bliss Balls to her exclusive class with Fashercise at Holborn’s Boom Cycle, to launch her new IRIS leggings. Obviously I was very excited not only to try out the Boom Cycle class, but to meet some amazing bloggers and let them try out my Bliss Balls.

I really couldn’t recommend the Boom Cycle class enough! I am a triathlete who is aspiring to do IronMan, which is a 120 mile bike ride (not to mention the 2.4 mile swim and Marathon), so my bike sessions usually include a cold, windy, lonely and long amount of hours outside! Boom Cycle was absolutely amazing to be on a bike inside and dancing to Beyonce, training at the same time!

After the class I couldn’t help myself.. I had to try one of their ‘ Vanilla Nut’ shakes! This was literally amazing, and I will be going back soon to try the other flavours!

Training Update

I have felt like I have had a rough few months in terms of training, and in all honesty I am not expecting anything spectacular at my next event (London Marathon), which is gutting and almost makes me want to defer my place!

BUT I don’t run for results or for anything other then the fact that I love it, so of course I will be doing it, and with a smile if I can manage!

The last few weeks have been hectic both at work and in my social life, making it difficult to fit in training- difficult but not impossible. I even had to go as far as using a precious holiday day off work just to fit in my 18 mile training run, (I went to Paris with my boyfriend instead of weekend training, I can’t really complain!)

Recently I officially joined the Serpentines running club, I am such a traitor to my City Of Hull Athletics club back home! But this now means I can attend their track sessions and 3 parks run which is conveniently a short walk away from my new flat, and also means someone is pushing me to finally start to incorporate some speed work into my training.. ugh!

I have just come home from a track session: 10 minutes at 10k pace (for me this is usually about 7:16 minute miles but tonight was 7:03), then 300meter reps at 3k pace with VERY short recovery jogs, finishing on another 10 mins at 10k pace! Last week I also ran to Primrose Hill for hill reps which I can’t wait to do again this week!

I am in London this weekend so will be doing a boring (any run thats not in yorkshire is boring!) 18 miles around richmond park area. In about 2 weeks I am in Tenerife for a good week of sunny training, so keep a watch for pool side blog posts!

Nama delivery

I started the weekend with a cold, only to make it worse by going on a night out! This isn’t a good combination when you’re moving house the very next day.. but this is how the weekend went.

My first night in my new place and my housemates were away for the weekend. I was sooo tired and poorly that I didn’t even feel like cooking up a nice dinner for myself! Thank goodness for Quiqup! If you have this app then you can appreciate how amazing this is.. Its a list of all the places around you categorised into: drinks, takeaway, detox, groceries, health and beauty and electronics. I clicked on detox and a list of amazing healthy cafes and restaurants appeared for me to chose from for someone to go collect my order for me!

Nama in Notting Hill was on the list, somewhere I have been wanting to try for ages! It is a delicious, fresh, raw food restaurant that is all about wellbeing through nutrition, and it did not disappoint. I went for the Lasagne Verdure: Layers of pomodoro sauce, herbed nut, seed & yellow pepper cheese, pesto & marinated spinach served between courgette ‘pasta’ strips, followed by fermented blueberry cheesecake. This was honestly one of the best ‘takeaway’s’ imaginable! I can’t wait to go visit the restaurant and try more of the menu.

Foodie Review: Tanya’s

Everything at Tanya’s is raw living, plant-based, hand-picked, organically grown, ethically sourced, and free from refined sugar or gluten – obviously I’m going to LOVE it!

I have seen Tanya’s mainly on Instagram and have been desperate to try it! I woke up with a cold on friday morning, had a late friday night and knew I needed the energy to move house on saturday afternoon.. and recover enough to get a long sunday run in! What better way to recover then with a hearty and healthy lunch with one (or two) smoothies.

Tanya’s is held in a hotel within walking distance from South Ken, it is absolutely beautiful inside with a conservatory roof providing lots of natural lighting. I love bright spaces, and it was also full of plants and fab inspirational quotes written around the place.. such a healthy environment to be in.


We arrived just after the breakfast menu but before the lunch one had started, a good excuse for a pre lunch smoothie and a chance to decide what to eat when everything sounded amazing! I had the ‘My Glow’ smoothie to start with – my doctor juice, blueberry, raspberry, strawberry and acai berry powder. How delicious and fruity!


I really need to learn some control when it comes to eating and drinking, It disappears as soon as it is brought to me! After hearing the staff recommendations I went for the superfood salad: half an avocado in superfood seed mix over spiralised veggies, wild rocket and lemon tahini sauce. Lucky for me my best friend and lunch date let me mop up all her left overs from the Detox Salad: probiotic sauerkraut, sprouts, lemon, tahini and kale fibre crackers. I also may have ordered myself a ‘Sweet Surrender’ milk: cacao, hazelnut milk, medicine flower, dates, salt and vanilla. Feed a cold, starve a fever.. right?

I enjoyed this lunch so much and defiantly need to go back to try the desserts, I can’t believe I actually left without one!

Snacks for the healthy Foodie

Anyone who knows me will tell you that all I do is eat! I can eat SOOO much for a fairly small person, so it really is a good job that I like to train and what I like to eat is all nice and nutritious.. or I would be in some serious trouble!

For anyone out there who is a snacker, ( I’m a 3 big meals a day and a millions snacks type of girl), here is a little review of some of the amazing little foodie snacks I have been able to try from all the amazing London health food shops!

First on the list would have to be my very own Bliss Balls. For anyone who doesn’t know, I created my own Bliss Balls last year.. they are an indulgent truffle that is full of amazing nutrients, great for a snack, treat or pre/post workout. Inspiral do a range of flavours of these amazing super bites, my favourite being the banana supergreen! They are vegan, organic, gluten and sugar free.. and include 7 vegan protein sources! Such a nutritious and yummy snack bags to carry around with you, available at most Whole Food stores.

A serious weakness of mine, (refined sugar or not) is popcorn! There are very very few things that include added sugar that I really crave, but give me a bag of sweet and salt popcorn- I will not say no.. I will also take a sharing size bag, and I will not be sharing. So you can imagine how excited I was to come across a bag of sweet and salt popcorn, cooked in coconut oil, and made with coconut sugar! I can not get enough of this from Planet Organic:

Coconut, coconut, coconut! I am nuts for anything coconut! Milk, Chocolate, Yogurt.. anything! Here are my favourite found coconut snacks, (please let me know in the comments if you know of anymore for me to try!)

When I talk to people who struggle to ‘give up’ unhealthy things, they always seem to find biscuits and cookies the hardest! There are sooo many easy, healthy and tasty recipes for cookies, and now you can even buy them – though these ones are a little pricey!

I make lots of my own snacks and I will continue to post them on here, but I really can’t help myself when I step into wholefoods! I would recommend all of the above products, hope you enjoy!

Home made chocolate milk and granola

I came home again on Friday night because I am moving house in London, and I have collected a LOT of extra clothes and shoes that I don’t really wear, the only way I can see me smoothly moving across London on my own meant taking lots of things home.

Usually my ‘long’ training run when I am in London is on a sunday (due to attending a club run), but back home we always do saturdays, so arriving home on Friday night I always prep a nice breakfast. If you keep up to date with my posts, you will have seen my usual pre long run breakfast of overnight oats.. I fancied a change this weekend, so made some cocoa granola to have over my favourite healthy ice-cream (recipe can be found on the same post about breakfasts!)

To make 2 small or one large portions of cocoa granola:

1 handful crushed wallnuts

1 handfull flaked almonds

2 tbsp flaked coconut

1 tbsp sunflower seeds

2 tbsp honey

2 tbsp coconut oil

1.5 cups of oats

1 tbsp cocoa powder

2 tbsp coconut milk

Simply mix all the ingredients together so that everything has been covered by the cocoa, coconut oil, coconut milk and honey, then bake for 30 mins and 160 degrees.

Instead of one of our usual loops with our run group, we decided to tag along a Barracuda run (the club we are technically members of). We knew everyone that was there, and did a new 16 mile loop on the trails back to a lovely windmill cafe for tea and eggs. I found the run really tough – I don’t know if it is just taking me some time to recover from my injury or it was just quite a tough run, either way the sun was out, and it ended up being such a nice social run.

After I came home I was really craving something sweet, plus I have also read so many things that have stated the benefits of chocolate milk post exercise, something to do with it having the ideal carbohydrate to protein ratio, which is essential to to refuel damaged or tired muscles. I decided to make my own natural and healthy chocolate milk:

2 cups of coconut milk

1 heaped tbsp cocoa powder

3 dates

1 tsp honey

Blend the ingredients in a good blender, I like to use a Nutribullet when I am home, but when I am back in london my cheaper alternative is Breville and still does the job!
